The 2007 Winston Hill is an intense inky purple color. The aromas are copious; leading with notes of ripe black cherries, warm sticky buns topped with caramelized pecans, and fresh ground coffee beans. As further layers emerge; aromas of aniseed, dried sage and dusty cedar are uncovered. The palate is concentrated, vibrant, and beautifully polished: bursting with the rich flavors of brioche French toast drizzled with blackberry syrup, espresso bean Panna Cotta, dried blueberries, hickory smoked almonds, and Asian spiced ribs. This wine is strikingly balanced being both graceful and structured; with silky tannins that create a supple texture, while the well structured backbone provides a long lingering finish and noteworthy age-ability.

The most expensive offering is the 2007 Winston Hill Proprietary Red. Dominated by Cabernet Sauvignon (86%) blended with Petit Verdot, Merlot and Cabernet Franc, production is just under 1,000 cases. The wine is more tightly wound than the Cabernets exhibiting a deep ruby/purple color and a restrained nose that is difficult to coax out of the glass. In the mouth, it reveals sweetness, full-bodied power, beautiful elegance and a sense of graciousness and restraint as well as plenty of flavor, intensity, power and full-bodied appeal. Still hiding much of its character, this 2007 should evolve for at least two decades.

(14.5% alcohol): Bright medium ruby. Blackberry, boysenberry, licorice, violet, minerals and spicy oak on the vibrant nose. Lovely classy, fine-grained wine with juicy depth to its pure flavors of dark berries, bitter chocolate and savory minerality. Not a particularly thick wine but classier and darker than the Cabernet Sauvignon Reserve and with better support for its tannins. Finishes firm and impressively long, with lovely building energy.

Sweet and ripe in jammy cherries and blackberries, and framed in sweet, rich tannins, this Cabernet seems a bit direct and unidimensional now. It could be going through an awkward period of bottle blues, from which it could emerge after 4-6 additional years. After that, the score could rise considerably, but right now, it's somewhat candied and rustic.
